This strawberry and banana bread is delicious and healthy. Its low GI, high in protein and is simply delicious. It is diabetic friendly and low in saturated fat. Perfect for breakfast on the run, for afternoon tea or for a post workout snack.
You can adjust the recipe to suit your needs, you can add more strawberries, blueberries, apples or any fruit you like according to the season. You can add nuts for added protein and the sweetness can be adjusted according to your taste.
Ingredients:
2 Large overripe bananas, mashed
1 cup self raising flour, sifted
1/2 cup plain wholemeal flour, sifted
2 scoops vanilla whey protein powder (60g)
Pinch of salt
170g Sweetened Greek Yoghurt (or plain low fat is good too)
2 eggs
1 cup Strawberries, diced (140 g)
1 teaspoon cinnamon
2 tablespoons sweetener (you can use stevia, honey or fruisana which is a low GI fructose sweetener)
Method:
- Preheat your oven to 160 degrees Celsius
- In a bowel add your flours, protein powder, cinnamon, salt and sweetener and sift it in a bowel
- add the yoghurt, eggs, banana and stir till just combined
- add the strawberries and gently fold
- grease a loaf pan and put the mixture in the pan and put in the oven for about a hour or until the skewer comes out clean
Enjoy toasted or as is yum .....
