Ok I know what your thinking, this is not healthy. This version however is a lot healthier and lower in GI. Great for people with gluten intolerance and is so simple to make. 

Ingredients: 

1 cup natural (no sugar or salt) peanut butter
1 cup coconut sugar 
1 egg 
1 teaspoon baking powder

Method:

1) preheat the oven to 180 degrees Celsius 
2) beat together the sugar and peanut butter till creamy 
3) beat the egg and add it to the mixture 
4) add 1 teaspoon baking powder to the mixture 
5) take a tablespoon of the mixture and roll into balls. Put on a lined baking sheet and press down with a fork 
6) bake in the oven for 10 minutes or until it browns along the edges. 
7) let it cool and dig in. Perfect with a cup of herbal tea
