Recipe of the day Overnight Coconut Oats


It is now winter in Australia and temperatures are dropping. We are all wishing summer will come around already.

I found a recipe for a tropical inspired overnight oats which is so delicious, it will indeed remind you of a summers day and is also healthy for you.

It is very quick to prepair and in the morning you have a instant btreakfast, perfect for people on the go.

For One serving you will need:


  • 1/2 cup oats
  • 1 cup low fat coconut milk (you can also use 1/2 almond milk and 1/2 coconut milk if you want to cut calories further
  • 1 tablespoon of shredded coconut (or to taste)
  •  Drizzle of Honey to serve

The method is simple, put it all in a jar and shake. Put a lid on it and leave in the fridge over night and in the morning you will get a burst of summer. Drizzle some honey on the top for some sweetness 

Variations to the recipe: 

There are a number of variations you can make to the recipe. 

  1. Cut up some strawberries or any fruit on top of the oats for some added flavour (and nutrition of course)
  2. Before putting the oats in the fridge overnight, put a tablespoon of chia seeds in the oats for added texture and omega 3
  3. Add some chopped nuts on the top and drizzle some honey over the top for some texture
  4. Instead of coconut milk you can use any milk you like and create any flavour you like, almond milk, skinny milk etc
