Videos of the day Healthy Thai Green Curry

There are times where all we need is some comfort food for dinner but we dont want to consume the extra fat, sugar and calories. 
Curry is one of the ultimate comfort foods. Recently I decided to try making a healthy version of the Thai green curry.

 I combined two recipes that were similar but slightly different. The result was amazing. It was super tasty, warming, very comforting, filling and tasted amazing. 

It is spicy but not hot which is perfect for people like me that cant eat hot and spicy food. If you love super spicy food you can add additional chilli for a real kick.

 I will post up the recipe in the coming week.

Todays videos are based on this super yummy comfort food which is much healthier then the one you get at the restaurants. 

If you dont eat chicken (these videos contain chicken), you can add tofu, beef, prawns or white fish.

I served mine with low fat coconut rice. This was so easy to make and gave the rice a nice mild coconut flavour. 


All you do is for every cup of uncooked rice (I used jasmine rice but you can use any kind of rice), you add 1 cup of low fat coconut milk and 1 cup of water. I cooked it in a rice cooker but you can make it on the stove using the absorption method.
